Kitchen Equipment: The Short List That Covers Almost Everything

Kitchen shops are full of specialised equipment, and most home kitchens contain a drawer of items used once. The equipment that actually gets used daily is a surprisingly short list, and getting those few things right matters far more than owning everything else.

One good knife and something to sharpen it

A single well-made chef’s knife or a good Indian-style vegetable knife handles the overwhelming majority of preparation. A knife block of eight is largely decorative. What matters more than the knife itself is keeping it sharp — a dull knife is both frustrating and considerably more dangerous, and a basic sharpening stone or steel costs little.

Heavy pans that hold heat

Thin pans produce hot spots, burn food and warp. A heavy-based kadhai, a cast iron tawa and one thick-bottomed saucepan cover almost all cooking. Cast iron and carbon steel improve with use, cost less than premium non-stick, and last decades rather than years — non-stick coatings degrade within a few years regardless of price.

A pressure cooker, obviously

In an Indian kitchen this needs no argument. It is the single most time-efficient piece of equipment available and handles dal, meat, stock and steaming with equal competence.

Digital scales, which almost nobody buys

Volume measurement is inconsistent; weight is not. Scales cost very little and immediately improve baking and any recipe requiring precision. This is the highest-value under-owned item in most kitchens.

What to skip

Single-purpose gadgets of every kind — garlic presses, avocado tools, egg slicers, herb strippers. Elaborate appliance sets that occupy counter space and are used quarterly. Knife blocks. Anything advertised as making one specific task marginally faster.

What to spend on instead

Ingredients. The difference a good knife makes is real but bounded; the difference fresh spices, decent oil and produce bought in season makes is considerably larger and recurs with every meal.
